This exceptional dish is multi-faceted. Eat them as a meal, as a side dish, as a part of tacos or burritos. They may take more time than opening up a can, but they are SO worth it.
Ingredients:
* 1 bag (1 lb) black beans, rinsed thoroughly and drained
* 2 large onions
* 8 cloves of garlic
* approximately 1 cup olive oil
* optional sides: sour cream, cheddar cheese, chopped green onions, cilantro, salsa
Using a slow cooker, black beans do not need to soak first.
1. Add beans to slow cooker and cover with water so that the water is 1/2″ to 1″ above the beans. Add one onion, quartered and 3-4 garlic cloves, sliced in half. Cook on low setting for 7-8 hours until the beans are soft.
2. Chop the remaining onion and 4 garlic cloves.
3. Lightly sautee half of the onion and half of the garlic cloves in 3-4 tablespoons of olive oil. When the onions are tender, scoop in half of the beans from the crock pot with some of the liquid. Set mixture aside.
4. Repeat step three with the remaining onion, garlic, olive oil and beans.
You can eat the beans whole, or puree them in your food processer. One favorite way to eat them is ‘half-and-half’ (half whole beans and half pureed). Serve warm and enjoy as they are or with one of the optional sides listed above.
